Our favourite vegan breakfast recipes are mix of hot and cold dishes – great for a special weekend brunch or a midweek morning treat.

There are so many ways to make the dishes you know and love suit a plant-based diet. From waffles, oats and vegan pancakes, to savoury brunch ideas like shiitake bacon, potato hash and even homemade bread, we’ve got vegan breakfast foods covered!

START THE DAY SWEET

Starting off with a true vegan breakfast hero: the mighty granola. Simply batch-bake a delicious mix of nuts, seeds, desiccated coconut and dried fruits with cinnamon and maple syrup, and you’ll have a speedy dish for you and the family to enjoy throughout the week. Jools’ recipe ticks all the boxes.

Poaching is a simple way of enhancing the natural flavours of seasonal fruit, like rhubarb, which then buddies up beautifully with your favourite plant-based yoghurt, granola or overnight oats. Or you could try poaching rhubarb batons for just a few minutes on a low heat until just beginning to soften, then store in the fridge in their poaching liquid overnight – watch them turn super-pink!

A steaming bowl of porridge with all your favourite toppings is hard to beat. Choose your preferred plant-based milk, then mix and match your favourite fruit and nut combos for the ultimate brekkie. We love apple and pecan.

Everyone loves a pancake for brekkie, and this vegan and gluten-free recipe hits the spot! Buckwheat and rice flour are mixed with mashed banana to make a thick batter, they’re then finished with sliced strawberries studded on top. Serve with a plant-based yoghurt for a vegan winner.

Grilling skewered fruit is a fun vegan breakfast idea that’s worth the prep for some seriously juicy results. By caramelising the natural sugars, you boost the overall sweet flavour – one for the weekend that the whole family can get involved in!

On busy days, a smoothie is a great way to enjoy a breakfast on-the-go. Store-cupboard hero coconut milk teams up with mangos, banana and lime for a proper heavenly combo. And it’s worth getting hold of the Alfonso mango variety when it’s in season: they’re seriously good!

Or why not give this colourful layered fruity slushy a go? Lovely alongside porridge or granola.

These versatile oaty, no-cook snacks are the perfect elevenses pick-me-up, or the best breakfast sprinkle when crumbled over yoghurt. Flapjacks are quick to put together, and ideal for using up those oats, nuts and seeds left at the back of the cupboard.

We love these vegan bars. Sweet dates and apricots come together with almond butter and dark chocolate to make a super special snack. Great for those grab-and-run mornings with a cup of coffee.

SAVOURY SELECTION

Spice up your next weekend brunch with Meera Sodha’s kimchi, tofu and veggie pancakes. They’re packed with punchy flavours and served with spinach and a simple dipping sauce for a next-level brekkie.

Herby, gnarly and fragrant with chilli, this potato hash is a highly satisfying breakfast or brunch. Jamie’s recipe uses both sweet and white potatoes, and why not try adding some of Timothy Pakron’s shiitake bacon to give this one proper oomph?

VEGAN BREADS

We absolutely love Georgina Hayden’s twist on what has to be one of the most-loved naturally vegan breakfast foods, the Levantine manoushe (flatbread with za’atar and olive oil). Instead of baking as a flatbread, the dough is rolled up and cut into swirly buns. A truly satisfying savoury breakfast, served with crunchy radishes, cucumbers and olives.

Do as the Italians do and start your day with a coffee and some freshly baked focaccia. Try making the dough the day before, dimpling it into the tray and refrigerating, covered, overnight before baking it first thing in the morning. Tomorrow’s you will thank you for it!

Baking your own sourdough bread is not only thoroughly rewarding, it’s utterly delicious too. And let’s face it, who doesn’t love it toasted and topped with butter? But if watching a sourdough starter bubble away isn’t your idea of fun, try making easy homemade bread! Great for slicing up and stashing in the freezer for toast emergencies.
