  • a few coriander leaves , (optional)

Method

ON THE DAY Halve the pomegranate and, holding one half cut side down in the palm of your hand, bash the back with a spoon so all the seeds tumble out into a bowl. Squeeze in the juice from the other half through a sieve, stir in the mango chutney, then finely chop and add the coriander leaves, if you like.
