method

This is a wonderfully refreshing Brazilian cocktail using Cachaça. You should be able to pick up a bottle in most supermarkets these days, I’ve seen it made with vodka as well but if you can, use Cachaça to ensure it’s the real deal.

Roll the limes on your chopping board with the heel of your hand to get all the lovely juices going, then cut them into wedges and squeeze the juice into a large 1½ liter jug, chucking the wedges in there after you’ve squeezed them.

Add the sugar and ginger then spend a couple of minutes bashing and squishing it all up with the end of a wooden rolling pin to really get all those flavors going. Half fill the jug with crushed ice, and bash again. Pour in the Cachaça and stir well. Have a little taste then tweak the acidity to your liking, adding more sugar if needed. Top the jug up with more crushed ice then tear in the mint leaves and give it a good stir. Serve and enjoy as a refreshing cocktail with friends.

• 12 tablespoons golden caster sugar
• 2cm fresh ginger, peeled and finely grated
• 1kg ice cubes, crushed
• 1 x 70cl bottle of Cachaça

The classic caipirinha does not have ginger and mint, and you never squeeze the limes, ugh!!!

Hi Jamie. As a brazilian too, I use to do it in a much simple way: 50ml lemon juice, 50ml Cachaça, 2 ts white sugar. Mix it together and complete the glass with ice cubes. It's authentic and perfect. Try it!
Hi Jamie.

As a brazilian, I could not resist to say some things about our most famous drink. There is no rights or wrongs regarding these drinks. You can mix the ingredients anyway you want, but the classic one doesn't take ginger or mint(that said, I personally think is a nice touch) and you don't squeeze the limes. They are pressed with the sugar using mortar and pestle. Then you add the cachaça and the ice and blend all together in the cocktail shaker. Cheers!
tip: How to pick the most juicy limes? R: Choose the ones with the most glow on the rind.
