These American pancakes are great! Instead of being thin and silky like French crêpes, they are wonderfully fluffy and thick and can be made to perfection straight away. Simple, simple, simple – my Jools goes mad for them.

First separate the eggs, putting the whites into one bowl and the yolks into another. Add the flour, baking powder and milk to the yolks and mix to a smooth thick batter. Whisk the whites with the salt until they form stiff peaks. Fold into the batter – it is now ready to use.

Heat a good non-stick pan on a medium heat. Pour some of your batter into the pan and fry for a couple of minutes until it starts to look golden and firm. At this point sprinkle your chosen flavoring (see below) on to the uncooked side before loosening with a spatula and flipping the pancake over. Continue frying until both sides are golden.

You can make these pancakes large or small, to your liking. You can serve them simply doused in maple syrup and even with some butter or crème fraîche. Or if you choose to sprinkle with a flavouring, try one of these...

fresh corn from the cob
crispy bacon or pancetta
blueberries
banana
stewed apple
grated chocolate
anything else you can imagine...

PS Blueberry pancakes (above) are great but you must try the corn pancakes. On one condition – you must use fresh corn. To do this, remove the outer leaves and carefully run a knife down the cob – this will loosen all the lovely pieces of corn – and sprinkle these raw over your pancake, before flipping it in the pan. I like to have some grilled bacon over my corn pancakes, drizzled with a little maple syrup. This sounds bloody horrid but it honestly tastes great!

Looked for a recipe for US pancakes and decided to try this one on the basis of it being from Jamie Oliver, one of two Chefs that I trust 100% (The other being Gordon Ramsey).<br /> <br /> We only had 2 eggs in the house so we pressed on but only used 3oz flour and 4oz milk. There were mixed opinions in the house. Of the 3 of use 2 thought they were awesome while I found it just slightly too eggy, however thats my personal opinion. At the same time I appreciate that you need a certain amount of egg in order to whip up to make a fluffy consisency, so next time I make these Im going to experiment by using 3 egg whites whipped up but only 2 egg yolks.<br /> <br /> Its fine using a recipe that you find on the internet but at the same time I think you do need to adjust it to your own personal taste. <br /> <br /> Great Recipe Mr Oliver

Having lived in America for 3 years, I have been hunting for a great pancake recipe to cook up now in England. This is a fab recipe. I found it made tons of pancakes, and have some batter in the fridge for tomorrow morning. I added 'eggo' syrup and icing sugar. Fab!

I had sort of written off the American-style pancake until I saw this recipe and decided to give them one final chance to prove themselves to me. Well, they certainly did. I think the really great thing about them is the separation of the eggs - the beaten whites make them so light and fluffy, not at all like the dense, heavy ones I'd tried before that just couldn't compete with the French-style crepe. These pancakes offer something different, but I'll definitely be making these many more times to come. Thanks!

I'm an American, and I have to say these are the most phenomenal pancakes I've ever tried. I was a bit surprised that the recipe didn't call for sugar, butter or oil but after a taste I realized it didn't need any at all! Also, I didn't have any milk so I used half-and-half instead.

I've had this recipe since February 2010 and never made them. Last Wednesday my husband said he was liss for pancakes so I made him some. He couldn't believe I'd had this and never made them. Today I've just made my fourth batch as we live with my daughter and her three children I have to double up on the recipe. No alterations to the recipe other than the usual for being high altitude (6000 ft above sea level). Just printed one of your muffin recipes - I don't think it'll take me as long to bake those as it has to make the pancakes!!

This can be made gluten free. Just use a gluten free flour mix (I use a self raising gluten free mix and skip the baking powder). I also mix in ricotta before adding the eggwhites.

I invested in a good food mixer since making this first and it just takes a sec to make! Recently bought a bag of honey macadamias, blitzed them in the blender and sprinkled them on the batter side , oh sooo good!!! try it!!!!

I made these pancakes when my boyfriends family were over one weekend, yeah they took a while but boy werethey worth it, fresh strawberries sprinkled on top or the batter poured over sliced banana into the pan.... they were a big hit!!

i have made these kinds of pancakes before..soo good...but we ran out of syrup (of course) and we decided to use honey instead and sliced some bananas on top..

The amount of milk was not enough to have a liquid smooth batter . I had to double the milk quantity and i was happy with the results . I also used vanilla essence to the batter . My kids love the hint of vanilla in the pancakes .

I'm from Estonia and it's almost the same batter what I do here. I just don''t use any baking powder. Just eggs, flour, milk, some sugar and a pinch of salt. Of course like that they come out sweet. But I just love them. Really nice and fluffy. Love them with just golden syrup on top with cold milk. Yummy!! Doesn't need anything else on side.

Emily, sometimes you can over whip egg white and they do end up going soft again. Also it is extremely hard to get peaks with just a fork or hand whisk, an electric mixer is best.

These really are what they say on the box! Did the corn and grilled bacon thing, added some mushrooms. Bit disappointed that we didn't have any maple syrup so we are going to have them again this Sat morning for breakfast (today is Shrove Tuesday).

Anyone that is unsure about whisking the egg whites, just use your electric mixer for approx 2 mins per 3 eggs and if thats long enough keep going - they do form stiff peaks and the faster the speed seemed to be the better for me.

Same went for the batter, I tried mixing with a wooden spoon but wasn't getting anywhere so pulled out the electric mixer and that thickened it up enough for it to work beautifully!!

Me and my little sister have just made these i'm 13 and my sister is only 9 but we managed to make them. The only thing is i couldn't make my egg whites to form 'stiff peaks' I whisked for ages but in the end i added it when it was as stiff as i could get it and they turned out ok but has anyone got any tips? But loved the pancakes!!

Im 13 and have just made 'Pancakes USA Style' with no help at all (except from the book of cousre)! They were the best pancakes I have ever tasted in my life!! they were so simple and no-one in the house had made them before this so I am really pleased with myself!! This is the PERFECT pancake recipe! I used buttermilk and self-raising flour because I don't like the taste of baking powder, and they were so light and fluffy! I just had them with strawberry jam I'd made - but next time, I'm going to have caramelized banana, grilled bacon, and maple syrup.

These pancakes look and taste great, worked out perfectly. My son and I had them dusted with icing sugar with a drizzle of Maple Syrup. I'm never going back to my old pancake recipe which in comparison was heavy and rubbery. Can't wait to do the "corn thing" with them.
Batter holds up very well in the fridge overnight too, same quality pancakes next day!

I adore cooking and after seeing this recipe I had to try it..it looked so easy, and as my 12 year old son loves pancakes, thought I would give it a try. WOW...First of all, how easy to prepare!! Secondly, even my son wanted to cook them after seeing how easy it was for me. (and he did). Thirdly...the taste test..My son thought they were the best he had ever tasted (and he is a very fussy eater!!)... and yes they are gorgeous. Have only eaten with golden syrup - but I can understand why the americans eat them with eggs and bacon. I am making more tomorrow...no more supermarket pancakes for us!!!

by the way, you can also try to sprinkle your pancakes with mangoes (sliced into cubes) and pour a chocolate syrup. now you have a mango pancake in chocolate syrup. yum yum! =)
