7 vegetarian meals for the week ahead

Line up seven super-tasty meals with our week-long veggie meal planner. Planning ahead means you can do one big weekly shop, and make enough dinner for packed lunches the next day – win-win!

Start the week on a high with these brilliant Mexican bean wraps. Once you’ve made the main filling you can get creative with the side dishes depending on what you fancy. Think corn salsa, guacamole or shredded lettuce leaves.

TUESDAY

Deliciously creamy, Saag paneer is an Indian classic and a brilliant midweek meal. Have a go at making your own paneer, or pick up a pre-bought packet from the shop if you’re pressed for time.

WEDNESDAY

Make a whole batch of these lovely green fritters and keep a few for lunch the next day. Serve with a light salad and squeeze of lemon juice for a flavour-packed treat.

THURSDAY

For a big, hearty and comforting dish, you can’t go wrong with this Spiced aubergine and coconut curry. Ready in 35 minutes, it’s a fantastic go-to dish to have up your sleeve.

FRIDAY

Perfect for throwing together on Friday after a busy week, these Mega veggie nachos are packed with good things, and taste delicious. Crack open a beer and invite a few mates round.

SATURDAY

Have a little fun putting together a special veggie dinner for Saturday night. These soft gnudi are simply made from ricotta, Parmesan and a dusting of semolina.
