Fantastic with smoked pork or chicken
Ingredients
½ small sweet onion
2 tablespoons groundnut oil
1 x jalapeno
A good chunk of peeled ginger
3 x cloves garlic
4 ripe bananas
1 x peeled nutmeg
½ teaspoons five spice
½ teaspoons turmeric
Shot of rum
120ml / ½ cup white vinegar
1 x teaspoon of sea salt
1 x tablespoons honey
1 x brown sugar
1 x tablespoons tomato paste
1 x tablespoon soy sauce
Method
Method:
Peel the sweet onion and chopped up finely. Chop up the jalapeno including the seeds into small chunks; you can take out the seeds if you don’t want the heat.
Crush the peeled ginger and chop it up finely. Dice the garlic and then pull all the chopped ingredients into a hot pan and cook for 7 minutes.
Whilst the chopped ingredients are cooking in the pan, peel 4 super ripe bananas chop and mash them into small pieces.
Wait until the onions are sweating and when it becomes nearly translucent then add in the chopped bananas. You can also add in sultanas if you want it a bit fruity.
Grate ½ teaspoons nutmeg into the banana mixture and stir everything together.
Next comes all the goodness and spices to this ketchup. Add in the five spice, turmeric, shot of rum, white vinegar, sea salt, honey and brown sugar. Alternatively you can add just 2 tablespoons of honey instead if you don’t want brown sugar. Add the tomato paste with the soy sauce.
Stir all the ingredients together in the pan, add some water if it begins to dry up and loose the moisture. Give it a good stir to mush up everything together.
Turn the heat down and let it simmer and cook for 15- 20 minutes. Once its cook put it onto a dish and let it cool and it’s ready to serve with your pork or chicken!
