1.5 Kilos of Pork Ribs (6 Ribs)
1 Tsp all spice
1 tsp dried cumin
1 tsp of dried coriander
Handful of fresh coriander
1 tsp fennel seeds
1 tsp cayenne
Salt & pepper
Red wine vinegar
Golden syrup or honey
Rub the ribs with all spice, cumin, coriander, fennel seeds, cayenne & seasoning. Red well then add a glug of red wine vinegar and soy sauce. Add a tbsp. of brown sauce and a tbsp. of ketchup and rub in again.
Place in a roasting tray and cover and cook for about 1 hour at 180c. Uncover the ribs and put back in the oven for a further 30 minutes.
Put brown sauce, ketchup, soy sauce, golden syrup and paprika into a bowl and mix. Cut the ribs and smear on the sauce. Place the coated ribs onto a BBQ / griddle pan or under the grill for 10-15 minutes or until all crispy and browned on top. Drizzle with some olive oil.
