FRIED PRAWN CRACKLE POPS
King prawns, peeled, tails kept on
Pork scratchings or crackling (blitzed in food processor)
1 chipotle chilli
Mango, skin off and cut into chunks
Red wine vinegar
Skewer the prawns through the tail and body to hold straight, season well then dip in the flour, then the egg and then the pork scratchings.
Have a deep fat fryer on and put the prawns in there for a few minutes until cooked and golden.
Serve with chipotle ketchup.
Put the chipotle chili in a pan of water and bring to the boil to hydrate. Remove the chilli and put in a food processor with the mango, red wine vinegar, brown sugar and honey. Blitz to a puree.
