makes a big jam jar
Ingredients
6 scotch bonnet peppers
4 cloves of garlic
A little splash of red wine vinegar
Splash of orange / tropical fruit juice
Salt & pepper
Tbsp• of cornflour
1 mango / papaya / guava
All spice
1 tbsp of brown sugar
Spring onions
Method
Put whole scotch bonnets into a large roasting tray with garlic cloves and roast in the oven on 180c for 15 – 20 mins slowly until lightly coloured with a little oil.
Remove the chilli seeds if you don’t like it as hot.
Once cooked, place in a pan with red wine vinegar, fruit juice, seasoning, cornflour, the fruit, all spice, brown sugar and spring onions. Cook down a little and the cornflour should help it to thicken.
Blitz in a food processor and serve with daddy ribs.
