These are the chewy version of Anzac biscuits. I prefer them to the more dry, crunchy ones.
Ingredients
1 cup plain flour
1 cup rolled oats
1 cup dessicated coconut
3/4 cup brown sugar
125g butter
2 tbs golden syrup
1 tsp bicarbonate of soda
Method
Preheat oven to 160 degrees. Use 2 non-stick baking trays, or line them with non-stick baking paper.
Sift flour into a large bowl, add the oats, coconut and brown sugar. Stir together.
In a small saucepan, melt the butter, golden syrup and 2 tablespoons of water together over a medium heat until melted. Remove from heat. Stir in the bicarbonate of soda. The liquid should froth up a bit.
Pour the butter mixture into the flour mixture and stir until combined.
Roll level tablespoons of the mixture into balls and place on trays about 5cm apart (to allow for them spreading). Press with a fork lightly to flatten slightly.
Do not worry if you have some left over dry mixture in the bottom of the bowl, just dispose of that.
Bake for 10 mins or until golden brown.
Remove from oven and allow to stand on trays for 5 minutes, before transferring to a wire rack to cool completely.
Store in an airtight container for up to 2 weeks. Can also be frozen.
Note: when these are removed from the oven they will still be soft, but they do harden up a bit on the tray. They are cooked if they are golden.

Whoooo If you forget to sift the flour it's ok!! <br /> <br /> Today I found out it works out just fine!! So people don't you worry if you forget to sift the flour!!

These biscuits are AMAZING! They come out of the oven incredibly soft but don't worry, they firm up like a champ.

Everyone needs to make something and money raised goes to the pediatric ward at Canberra hospital here in Australia. Catch is the dish must be different and contain oats, coconut and golden syrup. It can't be Anzac biscuits and it must be presented with an Australian and /or Anzac flourish.

Don't know if you can get corn syrup in France, but it's a reasonable substitute. How about Treacle? If not, honey will work. Not as sweet but they'll still be better than no Anzac biscuits on Anzac Day!

Dear Jamie,
I am attempting to cook these biscuits and Bully beef stew as our Multiple Sclerosis Society are holding a WW1 evening this wednesday with Stephen Williams who is a Military expert on this subject and he has a full size mock up of a trench; so we felt that we aught to try out the food of the times as well. I hasten to say that generally I am useless in the kitchen and fpr me to cook even the simplest cake recipe is for me a military exercise in its self. However, we do enjoy watching your programmmes.
My eldest son is agreat advocate of your recipe's and he loves cooking.
