Baked Bean Lasagne

Baked Bean Lasagne

Delicious, healthy and very tasty!! Great for kids.

Ingredients
for the baked bean mix
1 red onion
3 cloves of garlic
1 red pepper
1 or 2 courgettes
hand full of baby corn
hand full of green beans
2 tins of baked beans
1 jar or carton of pasatta
fresh basil to taste
salt and pepper to taste

white source
85g butter
85g plain flour
750g milk
grated chedder or parmasan to taste
1/2tsp of mustard powder

fresh lasagne sheets
extra cheese for top


Method
Add olive oil to pan along with chopped onion and garlic. Add the courgette, pepper, baby corn and green beans keeping them nice and chunky! Add pasatta and both tins of baked beans, season to taste with basil, salt and pepper. Leave to simmer.
Add the butter to a separate pan and melt over a low heat, add the flour and mustard powder and mix until you form a paste that leaves the pan clean. Gradually add the milk and whisk, gradually turning up the heat as you do so. Once you have formed a smooth source, remove from heat and mix in the cheese.
Now to build the lasagne! You will need rather a large lasagne dish. Add 1/3 of the baked bean mix and top with 2 or 3 lasagne sheets ( depending on size) Repeat this process another 2 times! Top with the white source and extra cheese if desired.
Bake in a hot oven 180c/fan 160c/gas for around 40 minutes until golden.
