Banana and Almond Microwave Cake

This is an homage to our forumite ljbritt50. I was intending to make her recipe for almond honey cake (http://foodchallenges.ca/almond-honey-cake/) but didn\'t have all the ingredients and had a banana to use up. This is what came out and I must say it was very good. Gluten free and dairy free.

Ingredients
3/4 cup almond meal
1/2tsp baking powder
2 Tbsp golden syrup
1 Tbsp oil
1 egg
1.5Tbsp mashed banana

Method
Mix syrup, oil, egg and banana. Combine with almond meal and baking powder. Pour into a greased and dusted (with almond meal) 2 cup tall pyrex measuring jug. Cook at 1000W for 3 minutes in the microwave. Serve with icecream.

Meme,
I'm not sure, it can be kind of crumbly. I think it would be less than double the
cooking time. I often cook it in bursts in the microwave and it doesn't seem to do any
harm.

Look for italian apple and polenta cakes, you'll often find a gluten free one or a
recipe with very little flour that you can substitute in gluten free flour.
If I doubled the recipe for a proper cake size how long would you need it to cook for?
Just wondering, as looking for an almond cake with some kind of fruit in it, possibly apple???

Next variation. 1/2 cup almond meal, 1/4 cup hazelnut meal, 2Tbsp golden syrup, 1 egg, 1 Tbsp sour cream, 1 Tbsp cocoa and a small handful of choc chips. Same method.

Have also made this with hazelnut meal and some chopped up dates thrown in. A bit more crumbly (probably due to the dates) but rather nice.
