Bologna & Sunnyside-up Eggs w/Homemade Hash-browns

Ingredients
1 med potato (par-boiled & chopped)
1 slice bologna ( ¼ “ thick)
2 eggs
Salt and pepper to taste

Method
In a skillet, over low–medium heat, add butter. Sauté potato, until light golden brown and set aside. Fry eggs to your liking and remove. Add bologna and fry for 30-40 seconds on each side. Serve hot with toasted homemade bread and your favorite condiment. Marvellous with a good cup of steeped tea.



Tips:

Use olive or vegetable oil instead of butter (healthy eating) Use rendered salt pork fat instead of butter (more flavour) Fry bologna and eggs separately (eggs take flavour
