Coconut Flour Cookies

Coconut flour contains over 19% non-gluten protein! Therefore, it makes an excellent addition to shakes and smoothies where fiber and protein are needed. Or simply dissolve a spoonful in water as a high-fiber drink with a coconut flavor! This organic coconut flour is very versatile and very tasty. Sprinkle it over your favorite dishes to add a wonderful coconut flavor, use it as a thickener in soups and sauces - the possibilities are endless!

Ingredients
3/4 cup sugar
4 eggs
1/2 tsp vanilla extract
1/4 tsp salt
1/2 cup butter (room temp)
3/4 cup Coconut flour
2 tbsp sugar
2 tbsp cinnamon

Method
Beat the sugar, eggs, vanilla, salt and butter together. Mix well. Incorporate the flour and mix well. leave it to rest for 5 minutes.

In the meantime, mix together the cinnamon & sugar in a bowl.

Using a small melon baller, scoop up some of thedough, form it into a bal and tos it in the wugar mixture. Put on a parchment paper and flatten with a fork (a little)

bake for 15 minutes at 375F/ 190C

Coconut sugar is 1/3 the glycemic index of white sugar and is equally porportional. I substitute with coco sugar all the time and it gives a somewhat carmelized 'brown sugar' quality to the desserts. Yum! :)

I make these with lemon extract, they are soooooo good, leave out the cinnamon, I also use splenda instead of sugar to make them low carb.

Just baked them. I used honey instead of sugar, so i added a pinch of baking powder and a little more coconut flour. They turned out delicious! Thank you!

When using coconut flour, you need lots of eggs. I wonder if egg whites or flaxseed can be substituted.

The consistency is like cornbread if you use sugar substitute. Follow the recipe and the cookies are moist and delish!! This is my new fav coconut cookie ;-)

These were SO YUMMY! **Warning** coconut flour is <A HREF="http://www.ehow.com/about_5422496_nutritional-value-coconut-flour.html"> 58% fiber</A> ...so if you indulge, you may get more than a tummy ache. (This was the first thing I made with coconut flour...lol I learned the hard way! I took it as a lesson in self control :)

I made these substituting xylosweet (xylitol) for the sugar. The kids are loving it. The cookie consistency is a bit too much like cornbread for me.

Thanks SO much! I am finding little treasures of GREAT GF recipes in many places - I will never eat bad-tasting GF ood again - and it's SO much better when you can share with your GF friends amd they love it. I made these cookies the other day for my GF mother in law for the holidays. I'm normally not a fan of GF stuff (crumbly and dry, usually) but these are delicious. And they were so easy with so few ingredients. I loved them. I'm for sure making them again. Even if you aren't gluten free, these cookies are fab!
