Cream of Celery Soup

Cream of Celery Soup

Ingredients
1 head of organic celery, sliced

1 large onion, finely chopped

1 clove of garlic, chopped

Small bunch of flat leaved parsley, roughly chopped

1 litre of vegetable stock

100ml single cream (plus a little extra for serving if desired)

A good pinch of nutmeg and some black pepper to season

A couple of tbsps of extra virgin olive oil (or a mix of oil and butter)

Method
1. In a large saucepan or casserole, heat the oil gently and add the sliced celery, onion and garlic to the pan. Sweat over a gentle heat till vegetables are soft but not browned. This process will take around 15 minutes.
2. Add the chopped parsley and vegetable stock then season well with nutmeg and black pepper.
3. Simmer the soup for approx. 15 minutes then pour into a blender or food processor along with the single cream.
4. Process/puree at high speed till soup is smooth and creamy.

Serve with an extra drizzle of cream if you wish.

I just made this and it is wonderful! I also substituted almond milk for the cream, and put 3 cloves of garlic instead of one, and served it with a squeeze of fresh lemon juice.

I was looking for a good celery soup recipe that didn't require too many ingredients and didn't use potato. I've just made this and it really was delicious. I'm going to make another batch tomorrow for my work colleagues. Thanks for sharing! :-)

This is scrum-diddly-umptious. I cooked it as a starter for a cosy dinner date at home with my boyfriend, he absolutely loved it. mmmmm. I changed a few little deets so feel free to email me for my own personal (in my opinion :p ) improvements. All in all Jamie is a super star!! :D :D

I made this simply to use up celery that was sitting in the fridge. What a revelation, it is gorgeous! Added some Stilton to one potion which was a brilliant addition.

WOW! that was one of the best soup I made!! I only change the cream for almond milk as there is a lactose intolerance in the house. Even a 2 1/2 years old LOVED it! THANKS!

Always wondered what to do with the left over soup. Had a nutmeg left over from Christmas so was able to grate some fresh. Chopped up the celery leaf as well and added for presentation. Really lovely lunch time meal in this cold weather. Thanks Jamie!

Made this twice now, second time put a small chilli in with the garlic and butter.<br /> Just adds a bit of bite<br /> Beautiful taste.<br /> Going to try the coconut milk, but agree with Carl, keep away from salt. Pepper much better.<br /> <br />

I included 2 large cubed potatoes and also added 1/2 glass white wine. It made a nice warming lunch for a chilly winter day like today (I'm in Australia) Yum

I have never had celery soup before. This was really good. I added chicken stock instead, 1/2 teaspoon of mixed herbs(didn't have any nutmeg)and mushrooms after processing the soup.Also, I added very little cream. worked out amazing. Thanx Jamie<br />

Don't add frozen chopped mint instead of frozen chopped parsley. Whoops.

I have never tried a celery soup before but loved this recipe.. and it is so quick and easy to make! My son and I are dairy intolerant so I substituted the cream in this recipe for a can of coconut cream.. Yummm..Works so well..

A simple and elegant soup. It can be light and refreshing without the full suggested portion of cream, except to garnish with a swirl (IMHO).
In case you are a creature of habit, under no circumstances should you be tempted to add any salt!
