Dairy free cheese cake with lemon

Ingredients
50g vegetable/soya margarine
175g digestive biscuits
275g soya cream cheese
1/2 lemon , grated rind and juice
50g icing sugar
Thin slices of lemon to decorate

Method
Base :
Melt the margarine in a large sauce pan , crush the biscuits then add to the pan . Mix thoroughly then using the back of a spoon press into a lined , greased 8\'\' flan tin . Refrigerate .


Filling :
Put the soya cheese into a bowl with the lemon juice , rind and sugar . Stir vigorously and spoon onto the chilled base . Decorate with lemon slices and chill for a further 1/2 hour . Carefully remove flan case then indulge !

Tastes great but doesnt set, I think it's something to do with the lemon Juice I dnt think I'll use this recipe again

Like everyone else any workable dairy free recipe is a god send, its also kind of comforting to know that there are other people with severe allergies to dairy and that i'm not going mad when i find another brand of biscuit like party rings or random food product that i can eat like Asda garlic bread, bizarrely does not have dairy in ! Thank you and keep them coming.

Please can someone tell me what I am doing wrong. I have tried to make this twice and both times the topping doesn't set and i'm just left with a soggy mess.

Most margarines contain Whey, you can find dairy free margarines or a vegan one. I know Becel makes a vegan margarine.

My lactose intolerence is serve so I have to be very careful what i eat I found Asda and sainsbury are fantastic as most of their food no longer containsdairy unless really needed making shopping so much easier. Lacrofree people are amazing and always open for ideas they now have brought out cream making the nice naughty recipe allowed an airing lol. Jamie this cheesecake was so easy to make and was wonderful one I shall make again :)

Hobnobs and Rich Tea are the 2 biscuits i've found so far with no diary in them . . . and hobnobs make an awesome base!

Kim: Tofu is made from soy beans. It cannot be soy-free.

Well this looks lovely, but some of us milk intolerant people can't eat digestive biscuits, as they contain whey powder :(

I use the Lactofree Cheese that you get in the supermarkets and it works without gelatine in both baked and non baked cheesecakes. Fab invention! has made my day being able to eat cheesecake again.

My Father in law is lactose intolerant so this is a godsend. I tried it yesterday and it went down a storm not just for my father in law. I used the Lactofree cream cheese... really creamy

If you're having trouble finding dairy free digestives, try own-brand ginger biscuits. Just as crunchy, with a little extra taste and NORMALLY dairy free

At last a cheesecake that is dairy free. Cheesecake is my all time favorite dessert but since being diagnosed with Crohn's after 2 years of tests and more tests and having to adjust my diet I have found that dairy products trigger my symptoms. Now I can have cheesecake again and not suffer. Thank you.

I am lactose intolerant and allergic to soy (!) Any ideas of a replacement for the soya cream cheese? Would lactose free cream with gelatin work in its place?

Just a note of warning, it is worth getting tru free digestives as the main brand and stores own have whey powder or skimmed milk powder in which I cannot tolerate, other than that fantastic recipe, thank you!

I made this cheesecake last night and it was a real hit. My fiance was so delighted to have cheesecake again.

This is good - my daughter is lactose intolerant and it is nice for all of us to eat the same food at family get-togethers. I just cook all dairy-free food and no one is any the wiser! Viva [Vegetarian & Vegan Foundation] has some great ideas and a guide to dairy free living. I stuck it on the back of a cupboard door and just get the ingredients when I know my daughter will be visiting and eating. Lovely recipe for chocolate mousse, using silken tofu.

i realy miss cheese cake as i have to have only foods that are dairy free and we just found out my 13month old grandaughter has the same problem any more like this jamie please
