Dark Chocolate Mousse (Serves 4)

Dark Chocolate Mousse (Serves 4)

Ingredients
175g dark chocolate
splash of milk
1 egg yolk
4 egg whites
25g sugar
white chocolate shavings, to serve

Method
1. Break the dark chocolate into small pieces and melt in a bowl over simmering water. Pour in the milk and mix well. Remove the bowl from the heat and whisk in the egg yolk. Allow to cool.
2. In a bowl, whisk the egg whites until they form soft peaks, adding the sugar little by little as you do so.
3. Fold a quarter of the egg whites into the chocolate, and then whisk briefly. Carefully fold in the remaining egg whites.
4. Pour into 4 ramekins or serving bowls and chill for at least an hour. Serve with the whie chocolate shavings.

I found adding a splash of milk instantly solidified the melted chocolate making it difficult to incorporate the egg yolk. It stayed fairly stiff so that when I folded in egg whites the chocolate clumped and the overall consistency was gritty rather than smooth. Maybe the milk was too cold? Or something to do with the chocolate I used (Lindt dark, 85% cocoa).

Yummy! Took 5 mins to make and is heaven to eat. A splash of milk is exactly what it says.

Just a quick note to those so worried about the 'splash of milk' confusion, this is an integral part of cooking and what most of us love about it, try it once if it doesnt come out 100% try again with less or more milk. Trial and error makes it more enjoyable, aswell as letting you understand how your ingrediants work not just how to read a recipe.

i wanna be a chef when im older and i got heston blumenthals book, and the trouble with the book is that u cant make one recipe because u need watwer baths and dry ice so i have t otake bits of recipes and put them together. this recipe will help me because the dark choclate mouse i want to make with my desert has some strage azz ingrediants in.

If i remember corectly in one series he added one top of whisky I made it that way and it was unbelievably delicous. I say try it that way for once........................ or twice :)))))

For anyone unsure, a splash is about 1.5-2 Fluid Ounces, as a dash is half a fluid ounce.

I was a bit alarmed when the milk went in as it went very odd (my splash may have been a bit big?!) But went very well in the end. YUM!

I found this recipe great and very easy, I find using sainsburys or tesco dark chocolate much better than bournville as this was way too rich.

This was really simple to make and went down very well indeed - the chocolate retains a bit of bite in the mousse, so you encounter chocolate chunks thorughout....yum!
