Fritatta

Ingredients
6-8 eggs
1 red onion chopped
2-3 cloves of garlic
1 green pepper chopped
2 medium potatoes or 6 mini potatoes chopped
1/4 cup of milk
butter or oil
salt and pepper to taste
dash of oregano and/or basil

Method
Ingredients:
1 red onion (you could use any onion you like)
4 cloves of garlic
1 green pepper
2 medium size potatoes or 6 of the little ones
8 eggs
1/4 cup of milk
butter
salt and pepper to taste
oregano and basil

1. Chop your onion, green pepper, potatoes and garlic
2. In a medium saucepan add butter and fry the onion and garlic for about 5 minutes
3. Add the rest of the veggies and cook until potatoes are tender or crisp, sprinkle with oregano, basil, salt and pepper
3. Meanwhile, beat eggs lightly and add milk. Sprinkle some salt and pepper into your egg mixture.
4. Add egg mixture into your saucepan (where the veggies are) and let cook on low heat.
5. With a knife or spatula go around the edges of the pan and move the pan around so that your uncooked eggs fill in the edges and cook.
6. When most of the egg is already cook, put a lid on the saucepan and raise your heat to a medium flame.
7. Now here comes the tricky part, make sure you're fritatta is not stuck to the pan and thoroughly cooked; you take a plate and put it over your saucepan to be able to turn it over and place back in the saucepan to brown the other side.

I made this for my new Brazilian family and they really enjoyed it, I hope you guys do to. The next time I make it I'll take a picture of it. ;)
