Koulourakia

Famous in Greece, these slighlt sweet bagel like breads are delicious

Ingredients
15 grams fresh yeast OR 1 1/2 tsp dry yeast
2 1/2 cup warm water (40C)
1 kg flour
1/3 cup sugar
1/4 cup vegetable oil
2 tsp salt
300 gram sesame seeds

Method
In 1/2 cup water disolve ONLY half of the yeast, add 3 tbsp flour and cover and leave to rise 24 hours.

Preheat oven 425
Just before making the dough, dissolve the rest of the yeast in another 1/2 of warm water and set aside.

Sift the flour & salt together. Make a well and add the sugar, oil, and both of the yeasts and your remaining water (1 1/2 cups). Knead your dough and leave to rise until double.

Now shape your dough into bagels and dip them in a bowl of lukewarm water and into the sesame straight away. Put them on your pan covered in parchment paper and bake for 15 mnutes or until golden.
