Mushroomballs....

Ingredients
Makes 4 serves
200 grms Portobello mushrooms
200 grms pleurotous mushrooms
1 big onion peeled and chopped
4 fresh green onions, chopped
a handful of parsley
a handful of dill
garlic one piece peeled and chopped
1 ½ te sp salt
1 tea sp pepper
½ tea sp sugar
2 ½ table sp flour(use a common one)
¼ cup olive oil
3 table sp olive oil
Lukewarm water
If you like you can add yellow cheese 50 grms, it will give to the mushromballs extra taste.

Method
Chop the mushrooms and put all the ingredients (onions, herbs, garlic ) in a blender. Mash them. In the mass that has been created, add salt, sugar, pepper and while mixing, add spoon by spoon, the flour. Add the olive oil , and keep mixing. Care to make a mass that it wont have the texture of a liquid( I mean it will be more thicken). At the end, add a portion of lukewarm water that will give to the mass the properly texture(thicken not liquid).The right texture, is a smooth, not much liquid mass.
Set the mixture aside in a fridge for an hour. This will make the mass more compact.
Using a table spoon take small portions of the mixture and place them in a baking pan. Care to place a baking paper or to apply olive oil on the bottom of the pan.
Bake the mushroomballs in the oven (warm air mode) for 20 minutes at 170 c. Instead of baking them you can fry them in olive oil….(your choice).
Serve them with spicy tomato sauce(home made).
To make a spicy home made tomato sauce,use 2-3 tomatoes ,garlic,2 peppers(red devils),salt, sugar, thyme and basil and olive oil.
To cook the sauce ,heat the oil and the garlic gently. Mash the tomatoes and add them in the pan . Add the salt, sugar, peppers etc, and cook for 15 minutes .Add some water if needs to.Let the sauce thicken and serve the sauce on top of the mushroom balls.
