  • 2 cups blanched almonds plus more for decorating (about 70)
  • 4 cups reg flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 12 tablespoons softened butter
  • 1 1/2 cups sugar
  • 1 egg
  • 2 tablespoons grated orange peel
  • 7 tablespoons orange juice
  • 1 tsp vanilla extract
  • pinch of salt
Preheat oven to 375f degrees

Spread almonds on baking sheet an toast for15 min. Remove and let cool.
Set aside 70 almonds for decorating and put the remaining in a food processor pulsing until you have a coarsely ground powder. Transfer to a bowl and add flour, baking soda and baking powder and mix to combine.
In another bowl, cream sugar and butter until fluffy and add egg. Scrap down sides and add orange zest, juice, vanilla and salt. Stir in dry ingredients.
Take tablespoon size pieces of dough and roll them into a ball then flatten to 1/2 inch and place on parchment-covered baking sheets a few inches apart. (Wetting hands with a little water will make this easier.)
Push each side in a little to form a square. Place a whole toasted almond in the middle of each cookie.
Bake for 20 min or until they brown. Let cool a few minutes and then place on rack to cool. They will crisp up as they cool down. Makes about 5 1/2 dozen.

This is based on a recipe from Sweet Siily by Victora Granof. I've tweaked it here and there and may even do some more playing around with it. I'm not totally satisfied with the balance of orange and almond and am thinking about using orange essence the next time I make them. But that's not to say that these aren't very good. They are and I hope you'll take the time to make them. (They're just dandy dunked in a little brandy!)
