Ingredients
This is a typical fresh dish in tuscany during the summer time...• The original recipe was born to don\'t waste the old bread.

Ingredients
Old Toscano Bread (5-6 days after)
Water
Olive Oil
White Wine Vinegar
Red Onion
Tomatoes
Tuna
Capers
and all you have into your refrigerator near expiry date (cheese, basil, etc)

Method
Skin the bread from old crust. Put It into the cold water and wait around 5 minutes.
With the hands, squeeze well the bread from water and make a little bread crumble.
Add tomatoes, basil, capers, tuna, oil and vinegar (as your taste), salt and pepper and mix well.
Put the result on refrigerator until serving moment.
Add red onion slice on the dish, olive oil and serve fresh immediaty. Enjoy
The result is a fresh dish, with recovery old bread without waste it, and you can eat it the next day too.
