Roulades is a fine and maybe some forgotten form of Swedish home cooking. Serve with steamed or pressed potatoes, some vegetables, like cauliflower, carrots or beans, and applesauce. Servings: 4
Ingredients
800 grams boneless pork chops
8 raw apple wedges
8 seedless prunes
salt and ground black pepper
ginger
butter for frying
Sauce:
3 dl broth
sky
2 tablespoons applesauce
1 tablespoon vinegar
salt and black pepper to taste
2 tablespoons potato flour
Method
1. Cut the meat into 8 slices and pound them out. Season with salt, black pepper and ginger. Place an apple slice and a prune on each slice, roll up and fasten with toothpicks.
2. Fry the roulades in butter in a pan or griddle pan, coat. Pour in the broth and allow to braise a lid on for about 30 minutes.
3. Pick up the roulades and remove the toothpicks. Whip up the sky for about 10 minutes. Add the applesauce and vinegar and season with salt and pepper. Thicken with potato flour mixed with a little cold water.
4. Add back roulades in the sauce and let it all to simmer before serving.
