We just had these for lunch, I was inspired after reading an article this week about the health benefits of cinnamon & also some apple pancakes I made a few weeks ago that my son really loved as they were sprinkled with sugar.
Ingredients
2 red apples
2 eggs
2 cups self raising flour
2 heaped tbls sugar
1 cup milk
1 tsp cinnamon
pinch salt
butter
canola sparay
extra sugar
Method
Core 2 red apples, but keep the skin on, then grate them on a coarse grater.
Put these into a mixing bowl
Add 2 eggs, cinnamon, flour, salt, sugar & milk
Mix until there are no floury lumps - I used a cake beater on low & mixed for less than a minute. If you feel it is too thick, add a little extra milk.
Heat a heavy pan until quite hot, spray with oil & put in just a teeny dot of butter.
Add tablespoons of mix, cooking them until bubbles appear, then turn them over.
I find at this point I need to turn the pan down a little, or the little pancakes will burn before cooking through.
Once cooked eat them straight away with butter & sugar sprinkled all over.
