Roasting times for Beef, Pork, Chicken and Lamb...

A Quck glance guide to roast meat cooking times and temperatures ...

Ingredients

Method
BEEF ROASTING TIMES...

Oven temp: Gas 4-5, 180°C,350°F

Rare

20mins per 450g/½kg(lb) + 20mins

Medium

25mins per 450g/½kg(lb) + 25mins

Well done

30mins per 450g/½kg(lb) + 30mins

ROASTING TIMES FOR PORK...

Temperature

Pre-heat oven to Gas mark 4-5, 180°C, 350°F

Medium

30mins per 450-500g (1lb) + 30mins
Roast to internal temp of approx 75-80°C


Well Done

35mins per 450-500g (1lb) +35mins
Roast to internal temp of approx 80-85°C


ROASTING TIMES FOR CHICKEN...


is a guideline for roasting times for a chicken at 350ºF (176ºC). Chicken Roasting times (unstuffed)

2½ - 3 lbs - 1 - 1¾ hrs
3½ - 4 lbs -1½ - 1¾ hrs
4½ - 5 lbs -1½ - 2 hrs
5 - 6 lbs -1¾ - 2½ hrs


Chicken Roasting times (stuffed)

2½ - 3 lbs -1½ - 2 hrs
3½ - 4 lbs -1¾ - 2¼ hrs
4½ - 5 lbs -2 - 2½ hrs
5 - 6 lbs -2¼ - 2¾ hrs

ROASTING TIMES FOR LAMB...

Suitable cuts:

Boned and rolled Breast,

Whole or half Leg

Whole or half Shoulder

Loin

Best End Neck

Saddle

Cooking time...

Quick Roasting - 200C, 400F, Gas mark 6

20-30 minutes per 450g/1lb plus an extra 20 minutes


Slow Roasting - 180C, 350F, Gas mark 4

35 minutes per 450g/1lb plus an extra 35 minutes



NB When using a covered tin or wrapping in foil, increase the cooking time by 20-30 minutes.



All Timings given are approximate and slight adjustments may be required to achieve the degree of cooking preferred.




POT ROASTING AND BRAISING TIMES FOR SILVERSIDE AND BRISKET...

Oven temp: Gas 4-5, 180°C, 350°F

Pot roast...

30-40mins per 450g/½kg(lb) + 30-40mins

Right above you Chris? And I'm slow roasting a leg of lamb at the moment and 180 degrees seems a little high to me for a slow roast, I like to cook at 160 degrees for a standard slow roast for about 3 hours for a leg of lamb. If I do pulled lamb I do it at 120 degrees for a minimum of 5-7 hours.
