This sexy leek soup is light but full on flavour.Its real easy and quick to make.The key is to let the leeks cook and become delicously soft and just slide in your mouth without noticing. I DO NOT AGREE WITH THE BLENDING OF THIS SOUP!
Ingredients
Serves 4
2 shallots,diced
2 cloves garlic,diced
knob of butter
1 tbs olive oil
2 medium sized leeks,sliced
1 large carrot,thinly sliced
tsp dried oregano
2 bay leafs
1 litre veg stock
bread roll
cheadder chesse
Method
1. heat your pot and add the oil an butter.Let the butter foam then add your garlic and shallot, colour it.
2. Add leeks and carrots and stir to combine,add oregano and bay leafs then cook for 10 minutes on a medium heat slightly covered.
3.add stock but do not cover leeks,bring to boil and simmer for 10-15 min until the leeks are soft and delicous and the carrot is cooked with a small bite.This makes a tasty base to the soup.
4. add the rest of the stock and simmer for 7min
5. meanwhile cut the bread into chunks and grill with some extra virgin olive oil until golden,add small bit of cheese and grill til melted.
SERVE!

I blended about 2/3rds leaving some whole veg. it worked really well

I've made this soup 3 times, it's delicious! I grow my own huge leeks, I've put up to 4 leeks in and increased the stock. It would be a nice soup to have if you're full of cold and feeling miserable! I noramally have my soup on the go for several days and it always improves as it matures, as long as it's heated up everyday it won't go off.

how do you soupify leeks Jamie? You best tell me or i'll get mad, you have a lot of moneys for making good recipes but what if they dont work?
Put it in the freeze it will freeze, like most things when they get cold enough
i have a question. will this recipe freeze ok, as i am at work on christmas day and need to get things prepared in advance?
