  • 2 eggs fruit of good neighborhood
  • fresh survived to winter thyme, marjoram, mint
  • a squeeze of lemon juice
  • salt,
  • ev Abruzzo olive oil
  • fresh milled spelt, barley, buckwheat flours
  • grano duro flour
  • 00 flour
  • 2 anchovies
  • peperoncino and garlic
I wanted to grant me a ready bought pizza today but ........... but my usual pizzeria was closed so I had the choice of eating a quick panino, to satiate a big hunger around 1 'o clock or adventure in making a fresh pasta from scratch.

Starting from my neighbor's hens eggs I went on adding all ingredients while I waited for water to boil. I used my pastamachine to shape the dough into spaghettini and tagliatelle. The fresh leaves went into the dough mixed with a little bit of different flours, but mainly grano duro one. I added no water today, I wanted my pasta to be golden.
There were two anchovies left in a little jar with oil, they went into the pan with a garlic clove and a bit of peperoncino, some seeds made the dish piccante at the right point.

While doing all this the weather changed from cloudy to a clear cheerful spring like day so did my mood.
