Tzatziki

Tzatziki

Ingredients
1/2 kilo greek yogurt
1/2 medium sized cucumber organic
1/2 carrot
3-6 cloves or garlic(or to taste)
extra virgin olive oil
good quality red wine vinegar
salt, pepper

optional:
parsley and dill
and/or mint

Method
Prepare:

Put the yogurt in a big bowl. Mince the garlic. Peel the cucumber(if it's organic don't), remove the seeds and cut it quite thinly. [b]Drain[/b] in very good. Cut the carrot the same way. Cut the herbs thinly if any used.

Make it:

Mix the cucumber, carrot, herbs if any, garlic and yogurt.
Add about 3 Tbsp olive oil and 1 Tbsp of vinegar. Add a pinch of salt and pepper.
Mix and taste.
You might wanna double the oil and vinegar, I don't usually measure them!

*If too loose put a slice of bread in it and refrigerate, the bread will suck the excess juice.

Serve:

Serve it with a couple of olives on top and some olive oil.
Enjoy!
