Vegetarian Feijoada

This is a Brazilian dish made of pork and some other preparations to follow. Its mainly served on Wednesdays and Saturdays. Vegetarians like me try different kinds of feijoada which comes out very tasty being light and healthier.

Ingredients
400 grs black beans
300grs provolone cheese
150 couriander
150 grs soy meat
2 red chillies
1 tsp masala
1 tsp cumin seeds
2 potatoes
2 tbs sunflower oil
2 tsp salt
1 apple

Method
Cook the beans till they are soft.
Chop the couriander and the chilies.
Cut the provolone in cubes.
Heat the oil and fry the cumin seeds, add the masala and the chillies.
Add the potatoes in cubes and the soy meat, cook for about 15 minutes stirring.
When the potatoes are soft and the soy meat put everything in the black beans and add the couriander, the salt and after 5 minutes add the provolone cheese.
When serving cut the apples, squeeze some lemon on them and decorate the feijoada.

Serve it with white rice and some farofa.

Hugs
