Sometimes I eat meat to keep considering myself halfvegetarian. Today I finely sliced a chicken breast horizontally and spread some thyme leaves on it. Then I lightly passed it without pressing on some 00 flour. I had very little evo oil in a large pan and let it color and seal on both sides adding all around the pan less than half glass of white wine. Allowed it to evaporate before adding salt and pepper, to be served with radicchio cornetto di Bordeaux and not too ripe tomatoes salad.
