Place Turkey in roasting tin and roast in oven for approx 2 hours basting every 20 minutes.
Meanwhile make the sauce.
Heat the butter in a saucepan and fry the onion and leek until softened. Stir in grated apple and thyme and cook for 1minute.
remove from heat, transfer to bowl and stir in nuts, breadcrumbs, eggs and seasoning.
Allow to cool then roll into small balls and place in single layer in ovenproof dish.
When turkey has been roasting for 2 hours, place stuffing balls in the oven on the shelf below the turkey and cook for 30 minutes. Test if turkey is cooked by piercing the thickest part of the breast with a skewer- the juices should run clear.
Serve with vegetables,roast potatoes, gravy and cranberry sauce.
