Place the pork fillet onto a clean board horizontally, cut it in half horizontally and then also lengthways so you have 4 pieces. Then with each piece slice this into 4 pieces.
In a large bowl, mix together sesame oil, soy and the honey. Place half into a tray and then put the pork into the tray and cover in the marinade- leave to one side.
In another bowl mix the roti ingredients in a bowl and then bring it all together to make a dough, on a clean floured surface roll out into a round shape.
Carefully cook the pork on a bbq for 5-10 minutes, basting in the saved marinade (sprinkling with sesame seeds half way) until golden on each side and cooked through. Leave to rest.
Place the bread carefully onto the hot BBQ and cook for a few minutes until the bread starts to bubble and you hear it cooking away, turn and cook on the other side.
To make the quick pickled veg, place the chunky veg in a bowl with the salt and sugar to soften. Wash off then add rice vinegar and seasoning.
Serve everything up, your roti, a little gem lettuce, sliced up some pork and serve up.
