Butter chicken recipe

I want two recipes, one for the kind of butter chicken that glows orange and one for the "proper" kind (if that even exists, as I'm perfectly aware that it is probably not a traditional recipe). And, yes, I do know that I could find this by looking through the other threads but the 7th potter book is calling and I am lazy.

Husband got angry Saturday when I was lost in the HP 7 and all his contacts on ICQ (instant messenger) had away messages saying something like "can't chat - must read HP"..... lol

Hi White Rabbit, long time no "speak".

Now as I have never made this recipe  I don't know if it glows orange, or is the proper kind, but it was posted on by an Aussie member and has received some good reviews.


1kg skinless chicken thigh fillets (or breast if you like)
2 TSP Garam masala
2TSP ground coriander
2/3 TSP chilli powder (or more if you wish)
1 TBSP grated fresh ginger
2 cloves garlic crushed
2 TBSP white vinegar (no need for wine vinegar)
1/4 cup (60ml) tomato paste (concentrate)
1/2 cup (125ml) yogurt

80g Ghee (or butter and a little oil)
1 large (200g) onion, finely chopped
1 Cinnamon stick
4 Cardamom pods, bruised
1 TSP Salt
3 TSP Sweet paprika
425g (or nearest measure) tin tomato puree (crushed tinned tomato or pasata works here)
3/4 Cup (180ml) Chicken stock
1 Cup (250ml) cream

Cut thigh fillets into large dice (about four pieces per thigh roughly). Combine ground spices, ginger, garlic, vinegar, paste and yogurt in a large bowl (or snap lock bag) add chicken, mix well to ensure chicken is well coated in marinade. Refrigerate overnight.

Heat ghee in large pan, add onion, cinnamon and cardamom, cook, stirring, until onion is lightly browned. Add the chicken and marinade, cook stirring for five minutes.

Add the salt, paprika, puree and stock. Simmer uncovered for about ten minutes, stirring occasionally. Add the cream, then simmer until chicken is tender (ten minutes for breasts, fifteen to twenty for thighs).

I requested a recipe for this a while back, not sure if it still would be on here. I have tried a few of the packet and jar sauces, but they just dont cut it. The one Ive had at a hospital cafe was surprisingly very nice, no idea whats in it though.

How many do you want???

Chicken Makhani

*    2 (1kg) pounds of (bony) chicken / 1.25 (750g) pounds boneless
*    1 cup yogurt (dahi)
*    1" piece of ginger
*    8 cloves garlic
*    2 tbs lime juice
*    4" stick of cinnamon
*    8 cloves
*    8 cardamoms
*    10 black peppercorns
*    1 tbs oil
*    2.25  pounds (approx 1kg) tomatoes
*    1 tsp. dried fenugreek leaves (optional)
*    1 tbs. white pepper powder (essential)
*    1 ounce cream (optional but recommended for a touch of class)
*    1 !!pound!! butter. You can get away with 0.6 lb if 1 lb is too much. (I use much less)
*    salt to taste
*    coriander (cilantro): optional topping.
if you use yellow butter, then scale down the salt accordingly. If you use white butter, then you will need more salt.

1.clean chicken and remove the skin
2.make a smooth paste of yogurt, garlic, ginger, lime juice, cinnamon, cloves, cardamoms, peppercorns and the oil. Marinate the chicken in this for 6 hours.
3.Bake the chicken in a preheated oven for 10 minutes at 250 F (130 C). Put it aside. It kind of makes sense to finish steps 1-3 before starting step 4.
4.We need to get a tomato sauce. Cut tomatoes, put 'em in a pan (no water) and boil. When the quantity has dropped by half, strain through a fine sieve. What comes out of the sieve is the tomato sauce. (This is hard work with a clumsy sieve). [i]I use a mouli[/b]
5.Take a pan, start heating the sauce, add the butter. When the butter is melted, add the white pepper powder, salt, fenugreek leaves and cream.
6.Mix the chicken pieces into this sauce. You may like chopped coriander (cilantro) as topping. Serve hot. This works best with good rice (i.e. basmati).

Butter Chicken Or Murgh Makhani

For the chicken:

1 kg Chicken fillets cut into cubes

3-4 tbsp yogurt

3 tbsp lime juice

1 tsp garam masala

1 tsp chili powder

1 tbsp coriander powder

1 tsp cumin powder

1/2 tsp orange food colour (powder)

1 tbsp oil

salt to taste

For the Gravy:

3 large onions

1 can tinned whole tomatoes

1 tsp garlic paste

1 tsp ginger paste

1 tsp kasuri methi (available in Indian stores under that name)

salt to taste

1 tsp sugar

1 tbsp butter

100 ml fresh cream

1 tbsp oil

1 tbsp chili powder

1 tsp garam masala



For the chicken:

Slit the chicken pieces with a knife and rub salt and lime juice to them. Take a mixing bowl and add all the ingredients and mix them well to form a marinade. Marinate the chicken in it for 2 hours Place the chicken under a hot grill and grill till the chicken is cooked and slightly smoky. Keep it aside.

For the Gravy:

Chop the onion and fry it in the one tablespoon of oil and put it in the blender with the tinned tomatoes and kasuri methi, grind it into a smooth paste.

Now heat the butter in a pan and add the ginger garlic paste and fry for 2 minutes , Now add the pureed mixture and salt , chilli powder and garam masala and cook till the raw smell of tomatoes disappear, Now add the grilled chicken mix well and cook for 6 minutes more. Take off heat  and serve with naan .

Number of Onions and fresh cream can be increased for more sweeter and creamier gravy.

Butter Chicken


700 gm raw chicken

1 tsp red chilli powder
1 tsp ginger garlic paste
salt to taste
1/2 kg curd (yoghurt)

100 gm white butter
1/2 tsp black cumin seeds
1/2 kg tomato - pureed
1/2 tsp sugar
1 tsp red chilli powder
salt to taste
prepared chicken
75 gm white butter
100 gm fresh cream
4 sliced green chillies
1/2 tsp crushed fenugreek leaves


For the marinade,mix red chilli powder, ginger garlic paste, salt and curd together. Marinade is ready.

Now mix the raw chicken in the marinade and keep it in the refrigerator overnight.

Then roast the marinated chicken in a tandoor or an oven for about 5-10 minutes till it is three fourth done.

For the gravy, heat white butter in pan. Add black cumin seeds, tomato puree, sugar, red chilli powder and salt. Mix it well.

Now add the prepared chicken, white butter, fresh cream, sliced green chillies and crushed fenugreek leaves.

Cook till chicken is done.

Butter Chicken is ready to eat.

Serve hot with rice or naan.

I have made this. It was good. Cant remember exactly what colour it turned out though.

500gm chicken fillets
2 onions
1/2 bulb garlic
400gm tin tomatoes
1/4 cup cream
1/2 cup yogurt
butter (or ghee)

1tbls garam masala
2tbls cumin
2tbls coriander
2tbls tumeric
2tbls fenugreek
1tbls black pepper
2tsp salt

Gently saute onion & garlic in butter for 10 minutes stirring occasionally.
Add spices & fry for 5 minutes, stirring.
Add tomatoes, simmer 10 minutes.
Cool & blend.
Brown chicken, add tomato mixture, cream & yogurt.
Simmer 20 minutes very gently.

I sometimes add small cubes of par-cooked potato & a small amount of green peas to this with the chicken.
