Cheese Cake!!!

Hello from Spain!
I need help! Could somebody give me a good Cheese Cake recipe??? I've tried some of them (with quark cheese, yougourt, ...) but I haven't found yet the Defitive one.

Here's one I tried not too long ago and it's deeeeelish.

It's a New York style cheese cake so you have to bake it. The best part about it is that you can easily customise it with all sorts of flavors if you know the basic formula.

16 chocolate chip cookies or Oreos
50 g butter, melted
600 g cream cheese
200 ml creme fraiche (sour cream)
200 g sugar
20 g cornflour
220 g Chocolate, White or regular, melted
1/2 tsp vanilla essence
4 eggs lightly beaten

Heat the oven to 140 C. Line what ever form you are baking it in with baking parchment.
Blitz the cookies in a mixer and then pour the melted butter over them to make them a thick mush. Place the crumb mix in the baking tin and press them firmly down untill you make an even layer.

Put the cream cheese and sour cream in a processor along with the sugar and flour and beat them untill smooth. Then put in the melted chocolate and vanilla essence. Stirr in the eggs then pour the mixture into the tin.

Bake for one hour and ten minutes. After that the cake will be brown on top but still wobbly. Leave it to cool in the oven for an hour or two then chill preferably overnight.

And there you have it. This will serve 8-10 people.

Mars Bar Cheesecake

Water  1/4  cup(s)   
Gelatine  3  tsp   
Cream Cheese  500  gm  softened 
Castor Sugar  1/2  cup(s)   
Mars Bar  3  .  chopped finely 
Vanillin Sugar  1  tbsp   
Chocolate Biscuits  250  gm   
Butter  125  gm  melted 
Brown Sugar  1  tbsp   
Butter  20  gm  extra 
Thickened Cream  300  ml   
Milk Chocolate  60  gm  finely chopped 

Recipe Directions:

Crush biscuits until mixture resembles fine breadcrumbs. Add butter and vanillin sugar process until just combined.
Press mixture evenly over base and up 1/2 the side of spring form tin. Place on tray and refrigerate about 30 minutes or until firm.
Meanwhile combine brown sugar extra butter and 2 tablespoons cream in small saucepan. Stir over low heat, without boiling, until sugar dissolves.
Make chocolate sauce, combine chocolate and another 2 tablespoons of the cream in another small saucepan, stir until chocolate melt.
Sprinkle gelatine over the water in a heatproof jug, stand jug in a small saucepan of simmering water, stir until gelatine dissolves. Cool for several minutes.
Beat cream cheese and castor sugar in medium bowl with electric mixer until soft peaks form. Stir gelatine mixture into cream cheese mixture with sliced Mars Bars, fold in cream.
Pour half of the cream cheese mixture into crumb crust and drizzle the butterscotch and chocolate sauce over cream cheese mixture. Pull skewer backwards and forwards through mixture to create a rippled effect.
Repeat with remaining cream cheese mixture and sauces. Cover cheesecake, refrigerate for several hours or overnight until set.
Garnish with extra Mars Bars for effect.

Chocolate Biscuits  200  gm  or Chocolate Chip Cookies 
Butter  50  gm  Melted 
Cream Cheese  500  gm   
Castor Sugar  1/2  cup(s)   
Vanilla Beans  2  .   
Gelatine  3  tsp   
Water  1/3  cup(s)  Boiling 
Thickened Cream  300  ml  Whipped 
Chocolate  180  gm  White 

Recipe Directions:

Break the biscuits and place in a food processor. Process until the mixture resembles fine breadcrumbs. Place in a bowl and stir in the butter. Press the mixture into a springform tin and place in the fridge to set for 30 minutes.
Beat the cream cheese and sugar together in a bowl.
Spilt the vanilla beans in half lengthways and scrape out the seeds using a sharp knife. Combine the seeds with the cream cheese and beat until the mixture is smooth.
Place the gelatine in a small bowl with the boiling water. Whisk until the gelatine dissolves. Leave 2-3 minutes to cool.
Stir the cream and gelatine into the cream cheese mixture.
Place the chocolate in a small microwave dish. Microwave, uncovered, on medium heat for 1 minute, stir. Repeat the process in 30 second intervals until melted.
Stir the chocolate into the mixture and pour into the tin. Cover with plastic wrap and place in fridge for 4-6 hours or overnight

Classic Lemon Cheesecake

You need:
250g sweet biscuit crumbs
125g melted butter
250g packet cream cheese
400g condensed milk
2 teaspoons grated lemon rind
80 mls lemon juice
1 teaspoon gelatine powder
1 tablespoon water

Method:
Combine biscuit crumbs and butter and press on bottom of tin.

Add rest of ingrediants except for gelatine and water, and beat until soft and smooth.

Dissolve gelatine in water and add to mixture.

Mix, refrigerate and eat.

BANOFFI  CHEESECAKE

125gm plain sweet biscuits
75gm butter, melted
3 Lady Finger bananas, thinly sliced to decorate
Whipped cream to serve
FILLING
2 x 250gm blocks cream cheese, softened
3 eggs
1 cup cream
½ brown sugar, firmly packed
2 tab lemon juice
2 Cavendish bananas
SAUCE
½ cup cream
½ cup brown sugar, firmly packed
100gm butter, chopped

Grease a 24cm springform tin; line base & side with baking paper.
Process the biscuits until finely crushed; add butter, process until just combined.
Press biscuit mixture over the base of the tin.  Place in freezer while preparing the filling.
Filling:  Beat the cream cheese until smooth, add eggs, cream, sugar & juice; beat for about 5 minutes or until thick & smooth.  Cut the Cavendish bananas into slices.
Pour half the filling over the biscuit base; top with the banana slices. Pour over remaining filling.
Cook in a slow oven, 150c, for about 55 minutes or until filling is just set.  Cool in the oven with the door ajar.  Cover & refrigerate for about 4 hours or over night.
Sauce:  Combine all ingredients in a small pan; stir over a low heat until sugar is dissolved.  Simmer uncovered for 2 minutes.
Decorate top of cheesecake with banana slices.  Serve cut into wedges with warm sauce & whipped cream.

1.CRUSH DIGESTIVES IN A BOWL
2. MELT THE BUTTER AND ADD TO THE BOWL OF DIGESTIVES
3.THE SPREAD THE DIGESTIVE MIX INTO DISH FLATTEN DOWN WITH SPOON
4. MIX THE MASCARPONE CHEESE AND ICING SUGAR TOGETHER , THE SPREAD ON TOP OF DIGESTIVE BAS. AND DECORATE WITH YOUR DESIRED FRUIT OR LEAVE PLAIN

The Mars Bar cheesecake's going to have to be done.  Can I just clarify what would count as 'Thickened Cream'?  Condensed milk or something like whipping cream?

Thickened cream is just fresh whipping cream of a thicker consistency. It is also called heavy cream (well here in Oz anyway!) but it is definitely not condensed milk.
It is a bit like the whipping cream when starting to whip & thicken (just heavier) if that makes sense! lol
