Crispy chicken skin

How do I get the skin on my roast chicken really crispy? I rub chicken with oil and seasoning, then it goes in the oven at 220 for 10 minutes, after that I turn it down to 180 for an hour, but the skin is just not crisp. Help!

Hi southcoaster, can only say how I do mine and they are crispy. I only season it, put in oven for the required time (according to size) just turn up to 200 for last 10 mins. I don't put anything else in the oven with the chick though. Always crispy, don't know if having fan oven makes a difference! Hope this helps.  big_smile

Hello pennysaints, am not far from you on the southcoast :-) Someone said I should use less oil, I'll try that next time. I have vegetables and lemon in the pan with the chicken which gives a delicious gravy. Will try fan option next time and see if it makes a difference, thanks.

true, true just dont use to much oil..or no oil at all cuz the skin itself containes fat so that will come out when it cooks, try it wiht a dry rub and maybe scoop over some of the fat that has dripped of the chicken half way in =']

oh yeah, put it in realy hot! then turn it down  yummy

Try blanching the chicken in boiling water for 30 seconds.

Place chicken in rapidly boiling water.

Wait 30 seconds

Plunge into ice water

Repeat process

Cover with kitchen paper and place in the fridge overnight

Remove chicken from fridge half an hour before roasting and season well

This will all help to dry the skin out before cooking, thus facilitating crispiness.

I just rub the chicken with a little olive oil then sprinkle some sea salt and cracked black pepper. Bang it in a pre-heated oven at the required temp and leave it, no turning it up and down. See my blog for a crispy skined chicken.

thats a fair method BUT lots o work, just to get a simpel crispy skin..

Just rub the **** thing with pepper and salt (dry rub) salt retracts moisture, and gril it on the rack, not a plate so the excess moisture and drop away.

voila, crispy skin guaranted

It's a little bit of extra work, but gets much better results.

But, you can always just sear it in a pan after roasting it

I remove the plastic wrap from the chicken and leave it in the microwave (away from cats and bugs) for an hour or so to dry out the skin.

Than I just rub it with a little EVOO, roast it breast side down and for the last fifteen minutes turn the breast up to crisp the skin.

Comes out perfect every time.

The best crispy skin we ever got was rubbing the chicken with sweet chilli sauce (we used the Nando's one).  It came out absolutely amazing, not fatty or greasy at all.
