  • FRIED PRAWN CRACKLE POPS
  • King prawns, peeled, tails kept on
  • Pork scratchings or crackling (blitzed in food processor)
  • Plain flour
  • 1 Egg
  • KETCHUP
  • 1 chipotle chilli
  • Mango, skin off and cut into chunks
  • Red wine vinegar
  • Brown sugar
  • Honey
Skewer the prawns through the tail and body to hold straight, season well then dip in the flour, then the egg and then the pork scratchings.

Have a deep fat fryer on and put the prawns in there for a few minutes until cooked and golden.

Serve with chipotle ketchup.

KETCHUP
Put the chipotle chili in a pan of water and bring to the boil to hydrate. Remove the chilli and put in a food processor with the mango, red wine vinegar, brown sugar and honey. Blitz to a puree.

Method
