Tips & Tricks for veggie family meals

Nature’s perfect protein parcel, eggs are a brilliant choice for veggies, and give you lots of lovely vitamins and minerals, too. Why not try rustling up my mate Anna Jones’ colourful spiced veggie rice with poached eggs for a midweek meal?

Get into the habit of shaking up your own salad dressings. Just remember not to drown your salad in dressing – a little goes a long way – and always dress at the last minute to stop the leaves from wilting.

Using tofu and Marmite in your base will give you a veggie burger that’ll knock your socks off. Tofu is a great source of calcium and phosphorus, both of which make for strong and healthy bones – perfect during growth spurts!

Stir-fries are a wonderful way to embrace a whole array of nutrient-packed veg. With your veggies prepped in advance and your pan super-hot, give this delicious veggie noodle stir-fry a go, or free-style with whatever you have in the fridge.

Sweet potatoes are the business! Packed with more vitamin C than regular spuds, they are a non-starchy carb, and count towards your family’s 5-a-day tally. Once you try my tasty baked sweet potatoes you won’t look back!
