Armenian Nutmeg Cake
INGREDIENTS
2 cups plain flour
1 teaspoon freshly grated nutmeg
½ teaspoon baking powder
1½ cups brown sugar
125g unsalted butter, roughly chopped
1 teaspoon bicarbonate of soda
¾ cup milk
1 egg, lightly beaten
½ cup chopped walnuts
2 tablespoons chopped walnuts, extra
METHOD
Preheat oven to 180°C or 160°C for fan forced. Grease and line a 20cm square cake tin.
Process flour, nutmeg, baking powder and sugar until combined. Add butter and process until mixture resembles breadcrumbs. Press 1½ cups of this mixture into the base of the prepared tin.
Transfer remaining mixture to a medium bowl. Add the combined bicarb of soda and milk, along with the egg and walnuts. Pour into prepared tin. Sprinkle over the extra walnuts and bake for 45 minutes or until mixture springs back when pressed lightly. Cover with alfoil if cake is browning too quickly. Cool 5 minutes in the pan before turning out on a wire rack to cool.
Cut into squares to serve.

Great thread idea mummza, if its cakes you want I've got plenty of homegrown recipes to share
Here's my first entry
Sticky Ginger Cake
8oz soft brown sugar
6oz butter
12oz golden syrup or treacle
1lb self raising flour
1 1/2 tspn ground ginger
1 egg
1/2 pt milk
3oz sultanas(optional)
If using treacle replace the brown sugar with caster sugar
Melt butter,sugar and syrup in a pan over a low heat stir until the grainy feeling goes.
Allow to cool
In a large bowl sift the flour with the ginger and make a well in the center, and add the butter/sugar mix, fold in until combined
Mix together the egg and the milk and add this to the cake mix, have a little patience here and keep stirring and gradually the milk will mix in leaving you with quite a sloppy cake mix.
This mix makes one 8" round cake and one 2lb loaf cake or 1 x 9 1/2" round cake.
Bake at 160C for about 1 - 1 1/4 hours.
Leave in the tin for 15 minutes and then cool as usual on a wire rack

This is one of my favourite cakes, once made it rarely sees the day out
Carrot Cake
175 grams soft brown sugar
175 ml oil
3 large eggs -- beaten
140 grams carrots -- finely grated
100 grams raisins
1 large orange -- grated zest only
175 grams SR flour
1 teaspoon bicarbonate of soda
1 teaspoon ground cinnamon
1/2 teaspoon nutmeg -- freshly grated
Prepare a 18cm square tin. Pre-heat oven to 180C, Gas 4.
Put sugar, eggs and oil into a large bowl and mix together.
Stir in the carrots, raisins and orange zest.
Mix together the flour, bicarbonate of soda and spices. Sift into the bowl of mixture.
Lightly mix until just evenly blended - do not over-stir.
Pour the mixture into the prepared tin and bake for 45 minutes until firm and springy.
Cool for 5 minutes in the tin, then turn out onto a cooling rack.

Ok I know that I started off this thread and then neglected it:oops: SORRY
I now have a recipe from my lovely Polish friend Maja who I work with. This is and old recipe that her mother used to make . It is a Walnut cake but is contains no flour. It seems to have a huge amount of eggs for a cake but it works! I have never made it myself, but Maja made one of these cakes for us all in the staff room. It was good, moist and nutty.
MAMA' TORT ORZECHOWY
Mama's Nut Cake
Ingredients.....9 eggs
250g caster sugar
250g walnuts
2-3 tablespoons of breadcrumbs
a little lemon juice
Method............
1. Grind the Walnuts untill they are ground quite fine.
2. Seperate the eggs.
3. Mix together the Egg yolks and the sugar,
beat this mixture untill the mixture is very pale .
4. Add the ground Walnuts.
5. Add 2 tablespoons of breadcrumbs to start with,
this will help to thicken the mixture , if you feel that
you need a little more bread crums , then
add a little more.
6. Whisk the egg whites untill stiff and fold these
in to the mixture.
Add a little squeeze of lemon juice if you wish!
7. Take a reasonable sized circular cake tin
and grease it very well,put a circle of baking
paper in the base of the tin.
8. Bake the cake in a medium heat oven (not too hot
an oven!) for around 3/4 hour.
9. After the cake has baked allow it to cool.
then top it with 'Masa'(icing),
a simple 'butter cream' icing that if flavoured with
Coffee is best for this cake.

Mummza...I promised you a cake and here it is. It's a cake that has Eurasian origins...and it is baked for special occasons,like Chinese New Year as it is really buttery and rich. It has a special ingredient...semolina. Which gives it a really unique taste and texture...do try!
SUGEE CAKE:
8 egg yolks
4 egg whites
250g caster sugar
180g semolina (easily available at major supermarkets)
60g plain flour
60g ground almonds
250g butter,softened
3 tbsp condensed milk
1/2 tsp vanilla extract
1/2 tsp baking powder
1 tbsp brandy
HOW:
Preheat oven to 150C.
Butter and flour an 8inch cake tin and line with baking paper.
Beat the egg whites in a mixer with a pinch of salt till soft peaks form,gradually beat in half the sugar till a stiff shiny meringue is formed...
While the eggwhites are beating,whisk the butter with the milk,vanilla and sugar till combined...
When the meringue is formed,add the yolks one at a time and beat till firm on the mixer. Add the semolina and stir well in one direction.
Fold in the creamed butter,sifted flour,baking powder. Lastly,fold in the almonds and brandy.
Bake for 1 and 1/4 hour in your oven or until the inserted skewer comes out clean.
Cool for 15 minutes in the tin then invert out onto a wire rack...cut and serve warm.

Stefanie, my lovely husbands birthday is next week, I might just try the cake for that occasion, I think that I have all the ingredients already in the cupborad apart from the brandy , I seem to remember using the rest of that in the christmas cooking,I might just go and buy a miniture of that .
