For many people, swapping meat for fish on Good Friday is part of the Easter tradition.

Baking it this way not only gives you a real showstopper of a centrepiece, it also helps cook the fish to perfection. If you’re after something a little easier, this tray-baked lemon sole is a real winner. Score the fish across the skin to allow all the wonderful Mediterranean flavours to really absorb into it.
