May is blooming marvellous! It’s a month full of fresh flavours and some real British fruit and veg gems, perfect for lighter dishes that suit the brighter days – and we love it!

From aubergine and asparagus to new potatoes and crab, there’s so much to enjoy right now. So we’ve picked out our favourite May seasonal recipes for you to rustle up – they’re packed with flavour, as they make the most of this season’s crops, plus they will be cheaper because of it. Get cracking with these eight great dishes.


Fresh crabmeat is a real treat to look forward to, so look out for it in your local fishmongers from April to September, when it’s sweetest. And it goes so brilliantly with fennel in this light, bright salad that’s perfect for spring evenings. Delicious!


With bank holiday weekends, there’s plenty of time for celebrating, and this is a great dish to roll out when you have guests. Watercress is bang in season in May, and makes the tastiest dip for seasonal veg. 


Brunchtimes have never looked so tasty! This recipe is on the table in 15 minutes, and is sure to get everyone around the table at brunch, lunch or dinner. And it really is the taste of spring, with courgette, peas and watercress. Beautiful. 


Gorgeously silky pasta, asparagus and garlic come together to create an elegant pasta dish that really packs a fantastic flavour punch. It’s super simple to make, uses minimal ingredients and looks impressive — what’s not to love?


Spinach is just hitting its stride in May, and it’s such a versatile ingredient. You can stir it through pasta, add it to salads, or fold it in wraps – but we love it in this pie. Creamy feta, rich spinach, buttery pastry and zingy lemon come together to make a real flavour powerhouse.  


Go all out with this show-stopping salmon, paired with a seasonal rhubarb sauce. Serve with steamed spring greens and you’ll be celebrating some of the best May has to offer.


New potatoes are a real seasonal treat, and this recipe is a brilliant twist on roast spuds. With zingy lemon, fresh herbs, pickled cucumber and radish, it really is the perfect spring dish.


Strawberry season starts at the end of May here in the UK, so celebrate British produce with this lovely little pud – great for dinner parties. The fresh blend of cream and yoghurt, combined with delicate fruit and crunchy biscuits, make for a truly heavenly dessert.
