1-minute berry ice cream

method


In advance: Put 4 small glasses in the freezer, or you can serve straight into ice cream cornets, if you prefer.

When you're all set up and ready to go, get the glasses (if using) and the frozen berries out of the freezer. Divide the fresh blueberries between the glasses or cornets. Put the honey and yogurt and leaves from the sprigs of mint into the food processor and whiz, then add the frozen berries and whiz again until combined. Spoon the frozen yogurt over the fresh berries and serve. Yum.

• 1 x 500g pack of mixed frozen berries
• 150g fresh blueberries
• 3–4 tablespoons runny honey
• 1 x 500g tub of natural yogurt
• a few sprigs of fresh mint
• optional: 4 small ice cream cornets

Use a good greek yogourtt such as Liberte. You can use the non-fat and it comes out very creamy. Yummy.

I added 150 gr of 20% good quality creme fraiche to 400 gr greek style yoghurt, while the honey was accacia honey - 5 tablespoons.<br /> As a topping, instead of fresh berries which I couldn't get, I mixed sour cherry preserve with whole fruit in it with 50 gr of creme fraiche and spooned over the ice cream. It was heavenly, my guests said it tonight!<br /> I believe the secret of this recipe is in the full fat yogurt + a touch of 20% creme fraiche added in the blender. The quality of honey is also important.<br /> Thank you all for your tips.

im going to give this a go with a soya yogurt for my 5yr old who loves icecream but needs to avoid dairy:-) also a good way to get her to eat more fruit - bonus!!! happy child, happy mum :-) thanx Jamie and team

Nice to see this on your website! When I wanted to loose some weight, but still wanted to enjoy nice food I made this up! only instead of using yogurt I used milk. It's really nice!

The mango version uses frozen mango instead of frozen berries, as long as the fruit is frozen i think he mentioned on the program. nom nom nom

Hi, I've made this with berries and mango, lowfat yoghurt, the honey but not the mint. It freezes and is not creamy at all. What am I doing wrong????

We made it without the blueberries but with the raspberries and it was great but i think you need to add chocolate chips but you also need 5 tbsp honey.

A friend explained (with mango) as we were going home, telling me how easy and good this recipe was. I hate mango and thought of raspberries. Bought said berries. Made with Onken (set) and one spoonful of honey. Made it just before starting supper and left in freezer. Half an hour later or thereabouts we ate it. TOTALLY DELICIOUS. I thoroughly recommend it.

OMG This is so delicious and so easy to make. I used fat free yogurt to make it very low fat. I also experimented and used banana instead of berries. Just omit the mint and replace with cinnamon. yum yum. Thankyou Jamie.
